Any controlling legislation must take into account the peculiar requirements and circumstances of the fish trade; pulic infrastructure should permit the proper handling of a very perishable product. For those who may be responsible for providing such support or infrastructure, or for drafting and administering legislation, various systems of selling fresh fish are described and the principles that should govern their design and operation are noted. The systems covered are itinerant selling; market stalls; specialized shops and supermarkets.
