Abstract: The guilt-afflicted fast food fancier now has access to information on the nutrient content and composition of the offerings of the major fast food chains, and can plan a nutritious daily menu of around 1200 calories which includes a cheeseburger and french fries. The standards for nutritional adequacy in the diet and the specific contributions of fast foods are discussed, as well as additives commonly used to retard spoilage or enhance flavor and appearance. The drawbacks of fad diets are enumerated; encouragement of sensible habits and changed attitudes is offered instead, based on self analysis, better nutrition knowledge, and exercise. The drinks, salad ingredients, condiments, and specialties of 24 chains from Arby's to White Castle are analyzed for protein, fat, and carbohydrate, and the percentage of contribution to caloric content. A 1-week diet plan offers a reasonably balanced daily intake including a fast food meal, that should result in up to 3 pounds weight loss per week.
In 2000, 5.7 million grandparents lived with their grandchildren and approximately 2.4 million of these individuals were raising their grandchildren (U.S. Bureau of the Census, 2001). There has been a growing trend of grandparents assuming the responsibility of caring for their grandchildren due to many factors, most commonly, divorce, substance abuse, incarceration, HIV/AIDS and child abuse or neglect. Currently, there are relatively limited supports in place to offer these grandparents. This new assumed parenting role is coupled with a changing society, elapsed time since they were themselves parents, and the associated familial stressors. Therefore, parenting classes, including psychoeducation and social support, are needed to assist grandparents with their new role. This dissertation is an exploratory study that examines the stress of grandparents raising their grandchildren, and the potential benefits of parenting classes. Grandparents involved with the City of Hartford Grandparent Program received seven weeks of the STEP parent education curriculum in addition to two initial introductory classes. Baseline, follow-up, and one month follow-up data were collected using self report measures. T-tests and correlation analyses were run to explore changes in parenting stress. Subjects showed a decrease in clinically significant levels of stress following the intervention; some of these changes were maintained at one month follow-up. Attendance was a significant variable. Anecdotal reports from the grandmothers were discussed. Limitations such as small sample size and lack of control group are discussed within the context of these results.
