There thay have lived in the mountains, near the ocean and now on a top secret dirt road in between. This book is dedicated to his friend Frank who he sailed with from Bermuda to Majorca, Spain and back to Grenada. Two months each way as the Lord weaved this whole Great Circle with mercy and grace. Perhaps you will recognize that in your life as you travel with Peter.

Beyond the Factory Gates examines the issue of asbestos and health in the USA between the early 1900's to the mid-1970s. Areas covered include the emergence of medical concern about the three fatal diseases related to asbestos (asbestosis, lung cancer and mesothelioma); the actions of the US Navy (the main consumer of asbestos-based insulation products); the response of the federal government before and after enactment of the Occupational Safety and Health Act in 1970; and the roles of organized labour and the asbestos industry. The book provides an important insight into occupational health and its regulation in twentieth century America, and is original in several ways. First, there is no satisfactory history of asbestos, health and medicine in the USA - a major gap in the literature. Second, no previous publication has examined the asbestos issue 'beyond the factory gates' in a non-manufacturing context and explored the complex interactions between organised labour, the US Government, business corporations and the US navy. Finally, Beyond the Factory Gates avoids the one-sided, anti-business interpretations that predominate much of the existing literature. It accepts that the history of asbestos is in many ways a human tragedy, but it rejects simplistic, universalised arguments that this has been a tragedy with a cast only villains, dupes and victims.

I first met Peter in December, 1932, when George Shuster, then editor of The Commonweal, later president of Hunter College, urged him to get into contact with me because our ideas were so similar, both our criticism of the social order and our sense of personal responsibility in doing something about it. It was not that "the world was too much with us" as we felt that God did not intend things to be as bad as they were. We believed that "in the Cross was joy of Spirit." We knew that due to original sin, "all nature travailleth and groaneth even until now," but also believed, as Juliana of Norwich said, that "the worst had already happened," i.e., the Fall, and that Christ had repaired that "happy fault."In other words, we both accepted the paradox which is Christianity . . . Peter's teaching was simple, so simple, as one can see from these phrased paragraphs, these Easy Essays, as we have come to call them, that many disregarded them. It was the sanctity of the man that made them dynamic. Although he synopsized hundreds of books for all of us who were his students, and that meant thousands of pages of phrased paragraphs, these essays were his only original writings, and even during his prime we used them in the paper just as he did in speaking, over and over again. Napoleon was, after his defeat at Leipzig, “granted” the island of Elba to rule. He soon found this unsatisfactory, and, early in 1815, left for the south of France, and marched on Paris to some acclamation. He was, all too quickly, defeated at Waterloo. Observing all this was Byron’s friend J.C. Hobhouse, an ardent Bonapartist. Byron, who posed as one, never answered his letters from the thick of things in Paris. This book is structured in four layers, and begins with an essay about Byron and Napoleon, which is then followed by Byron’s poems about Napoleon and Hobhouse’s diary. Hobhouse’s letters conclude the volume. Most of Hobhouse’s diary has never been published. The book is published, aptly, on the bicentenary of The Hundred Days.

Is culinary art really so exact that, as Delia Smith once wrote, “cooking is an exact art and not some casual game”? (BQ 2012) This exact view of cooking can be contrasted with an opposing observation by Tom Jaine, when he argued that, “if cooking becomes an art form rather than a means of providing a reasonable diet, then something is clearly wrong.” (BQ 2012a) Contrary to these opposing views (and other ones as will be discussed in the book), culinary art, in relation to both ingredients and techniques, is neither possible or impossible, nor desirable or undesirable, to the extent that the respective ideologues on different sides would like us to believe. Needless to say, this challenge to the opposing views of cooking does not mean that culinary art has no practical value, or that those interdisciplinary fields (related to culinary art) like food science, nutritional economics, food chemistry, food aesthetics, the ethics of killing for food, molecular gastronomy, food rheology, food photography, Shechita, the science of aphrodisiacs, and so on, are unimportant. Of course, neither of these extreme views is reasonable. Rather, this book offers an alternative, better way to understand the future of culinary art, especially in the dialectic context of ingredients and techniques—while learning from different approaches in the literature but without favoring any one of them or integrating them, since they are not necessarily compatible with each other. More specifically, this book offers a new theory (that is, the inquisitive theory of culinary art) to go beyond the existing approaches in a novel way. If successful, this seminal project is to fundamentally change the way that we think about culinary art in relation to ingredients and techniques from the combined perspectives of the mind, nature, society, and culture, with enormous implications for the human future and what the author originally called its “post-human” fate.
