Stricter control over additives in food and concern about the effects of contamination of food by industrial and agricultural chemicals are among the developments which are leading to an increasing emphasis on detailed and accurate analysis of food. However. analysis of food is required for many reasons, including detection of toxic components, monitoring legislation, detecting adulteration, formulation of controlled diets, controlling formulation during product development and detecting changes in food during storage and processing. Foods comprise a complex mixture of components and food analysis requires efficient methods of separation with high sensitivity or specificity of detection. Although many food components are involatile or thermally labile and therefore not suitable for analysis by gas chromatography, other components are volatile and this technique is the preferred analytical method. Developments in methods of derivati zation, injector design and column technology have also extended the applicability of gas chromatography to the analysis of relatively involatile compounds.

By providing an original interpretive framework for exploring ethics in relation to empathy and transcendence from multiple perspectives in continental philosophy, empathy is described as a trace of what remains essentially and irreducibly "other" in every act of givenness. The use of the phenomenological method places "Einfühlung theory" in its rich historical context, beginning with Husserl and the early phenomenologists and extending to contemporary issues that explore "otherness" in light of consciousness, gender, embodiment, community, intentionality, emotions, intersubjectivity, values, language, and apophatic discourse. The implications of recasting "empathy" in an interpretive and dialogical model of reciprocity envision new paradigms of understanding ethics as an infinite playing field. No longer subservient to metaphysics and ontology, empathy is described as an act of infinite concern, a "hermeneutics of suspicion" that transcends epistemological theory and ethical command. In the mid-first millennium B.C., the Eanna temple at Uruk sacrificed a minimum of nine lambs every day in its basic routine of offerings to its gods; in addition to these, special occasions and festivals demanded the sacrifice of as many as 90 lambs in a single day. All told, the Eanna sacrificed about 4,300 lambs per year. There were more than 120 herdsmen connected to the Eanna at any given time, and the temple expected there to be tens of thousands of sheep and goats under their responsibility. These herdsmen delivered male lambs to the Eanna for sacrifice, and the temple had an internal infrastructure for the care, maintenance, and ritual expenditure of these lambs; they also delivered wool, which the Eanna sold mostly in bulk quantities. This book aims to analyze the economic organization of this entire system of sheep and goat maintenance and utilization, to explore the economic and social relationships between the Eanna and its herdsmen, and to integrate the study of the Eanna’s animal economy into the developing picture of the Neo-Babylonian temple economy as a whole. Kozuh’s careful examination of the bookkeeping records, the management records, and legal documents connected with this substantial enterprise sheds new light on an arcane area of first-millennium Mesopotamian life that will be sure to enlighten our understanding of the daily life, economy, and social structure of this region.
