Bitter Southerner 2022 Summer Reading pick • Garden & Gun Best Southern Cookbooks pick • Forbes Best New Cookbooks For Travelers pick • 2021 Gourmand International Cookbook Award Finalist • A vivid cultural history of South Carolina's most distinctive ingredients and signature dishes From the influence of 1920 fashion on asparagus growers to an heirloom watermelon lost and found, Taste the State abounds with surprising stories from South Carolina's singularly rich food tradition. Here, Kevin Mitchell and David S. Shields present engaging profiles of eighty-two of the state's most distinctive ingredients, such as Carolina Gold rice, Sea Island White Flint corn, and the cone-shaped Charleston Wakefield cabbage, and signature dishes, such as shrimp and grits, chicken bog, okra soup, Frogmore stew, and crab rice. These portraits, illustrated with original photographs and historical drawings, provide origin stories and tales of kitchen creativity and agricultural innovation; historical "receipts" and modern recipes, including Chef Mitchell's distillation of traditions in Hoppin' John fritters, okra and crab stew, and more. Because Carolina cookery combines ingredients and cooking techniques of three greatly divergent cultural traditions, there is more than a little novelty and variety in the food. In Taste the State Mitchell and Shields celebrate the contributions of Native Americans (hominy grits, squashes, and beans), the Gullah Geechee (field peas, okra, guinea squash, rice, and sorghum), and European settlers (garden vegetables, grains, pigs, and cattle) in the mixture of ingredients and techniques that would become Carolina cooking. They also explore the specialties of every region—the famous rice and seafood dishes of the lowcountry; the Pee Dee's catfish and pinebark stews; the smothered cabbage, pumpkin chips, and mustard-based barbecue of the Dutch Fork and Orangeburg; the red chicken stew of the midlands; and the chestnuts, chinquapins, and corn bread recipes of mountain upstate. Taste the State presents the cultural histories of native ingredients and showcases the evolution of the dishes and the variety of preparations that have emerged. Here you will find true Carolina cooking in all of its cultural depth, historical vividness, and sumptuous splendor—from the plain home cooking of sweet potato pone to Lady Baltimore cake worthy of a Charleston society banquet.

JAMES BEARD AWARD WINNER • This is low and slow Texas BBQ done right: a family affair in smoke and soul, told through 75 recipes and stories from the founder of famous Los Angeles–based Bludso’s BBQ. ONE OF THE BEST COOKBOOKS OF THE YEAR: The New York Times, Bon Appétit, Los Angeles Times Kevin Bludso was born and raised in Compton, California, by a Black Panther–supporting mother and a police officer father. To stay out of trouble, he spent his summers in Corsicana, Texas, where he was schooled on the art of barbecue and worked long, hot hours on the pits at his granny’s legendary BBQ stand. In 2008, Kevin opened his own Bludso’s BBQ, a small walk-up stand in the heart of Compton that has led to multiple locations in California, Texas, and even Australia. In this honest and engaging cookbook, Kevin teaches you everything you need to know about BBQ: from choosing, seasoning, and cleaning your pit to selecting your brisket, ribs, and sausages, plus all the rubs and sauces you could need. Kevin also shares seventy-five delicious recipes for main meats such as BBQ Lamb Leg, Spicy Curried Oxtails, Buffalo Rib Tips, Blackened Catfish, and Grilled Mojo Shrimp; sides such as Creole Cabbage, Pinto Beans, and Down Home Mac & Cheese; and even desserts such as Mom’s Banana Pudding, Buttermilk Pie, and Kevin’s famous Hennessy on the Rocks, along with mouthwatering photographs to accompany them. But Bludso’s BBQ Cookbook is also a story about Kevin's family and community. It’s a love letter to the often misunderstood city of Compton, and the story of how Kevin has fed and supported his own community while teaching everyone the art of barbecue. This is more than a cookbook; it’s Kevin’s incredibly personal story of family, food, and how following your passion sometimes leads you back home.

Like Bubba Gump and his shrimp, I have a million ways to cook pork because I love it so much. If I had only one animal to eat forevermore, I would eat pigs. You could have a pork chop one day, pulled pork another, and cured bacon the next day, and they’d all taste completely different. You can't do that with chicken. Chicken tastes like chicken no matter what part of the animal you eat. And I love beef and lamb, but they don't have the amazing versatility of pork. Pork can be the star of the show or a background flavor. But no matter where it shows up, pork is always welcome on my table." ---from the introduction, Kiss a Pig On Bravo TV's season six of Top Chef, Kevin Gillespie became known for his love of pork. He literally wears it on his sleeve with his forearm tatoo. His first book, Fire in My Belly, a James Beard Award finalist, included his famous Bacon Jam. Now he shares his passion and love of pork in a book devoted entirely to the subject. Pure Pork Awesomeness celebrates pork's delicious versatility with more than 100 easy-to-follow recipes. Dig into everything from Bacon Popcorn and Bourbon Street Pork Chops to Korean Barbecued Pork Bulgogi, Vietnamese Spareribs with Chile and Lemongrass, and Banoffee Trifle with Candied Bacon. Organized like the pig itself, recipes use every cut of pork from shoulder and tenderloin to pork belly and ham. Find out how to buy the best-tasting pork available, differences among heritage breeds of pigs, and what to do with new cuts like "ribeye of pork". . . all from a witty, talented chef who knows the ins and outs of cooking pork at home.

A grand slam of a book. The sequel to the bestselling Baseball’s Greatest Insults, with hilarious put-downs and outrageous wisecracks about America’s national pastime. Too much real stuff has happened since Kevin Nelson collected Baseball's Greatest Insults in 1984. This hilarious all-star review reveals how the players, managers, umpires, owners, and the sports media really feel about one another.

“The real lessons of teamwork don’t happen on camera. They happen behind the closed doors of locker rooms and team meetings and practice facilities. Kevin and John open those closed doors. All you need to do is get reading!” —Larry Bird “Help the helper” is a basketball motto preached by some of the sport’s legendary coaches, including Dean Smith and Phil Jackson. All good players know they should support a teammate who’s under pressure. But the true greats know how to take it one step further. They fill the gaps left behind when one teammate goes to help another—gaps that are often far from the basket and out of the spotlight. The true greats step up in quiet ways to make sure no subtle holes develop on defense and no opportunities are missed on offense. Help the Helper will show you how to put this level of teamwork to work in your business, to build a culture that recognizes and rewards those who help the helper—even when they don’t have sexy statistics. In the process, it will teach you how to de-emphasize the CEO/quarterback/superstar and effectively redefine leadership. You’ll learn, for instance, how to: Create a dynasty of unselfishness. Manage energy, not people. Eat obstacles for breakfast. Act like an “unleader.” Consider how it works in the hospitality industry. In a great restaurant you don’t have to wait for your server to check on you; your needs are taken care of instantaneously, sometimes before you notice them. Everyone from the busboy to the maître d’ has one goal: the success of the team. Such coordination seems complicated for a small eatery, nearly impossible for a large organization. But it’s easier than you think. For a combined forty years, Pritchard and Eliot have focused on building high-performing groups. They’ve crushed Malcolm Gladwell’s 10,000-Hour Rule, logging upward of 50,000 hours studying the factors that create champions and dynasties, from the NBA and Major League Baseball to the Fortune 500. Exhaustive testing, scouting, and evaluating have taught them that truly special teams in all fields have one common denominator: a willingness to do whatever it takes to help the helper. Drawing on true and inspirational stories from sports to medicine to business, Help the Helper shows what’s behind the curtain that fuels great team performance.

These are the recollections seen through the eyes of a young Irish boy growing up in Notting Hill and Chelsea in the 1950s and 1960s with its trials and tribulations. However, great joy, poignancy, humour, and sadness that shines through from an era now long gone. It is a living testament to the love, courage, and fortitude of the human spirit which can always come shining through in any trial or, indeed, any tribulation.

The Dictionary of Louisiana French (DLF) provides the richest inventory of French vocabulary in Louisiana and reflects precisely the speech of the period from 1930 to the present. This dictionary describes the current usage of French-speaking peoples in the five broad regions of South Louisiana: the coastal marshes, the banks of the Mississippi River, the central area, the north, and the western prairie. Data were collected during interviews from at least five persons in each of twenty-four areas in these regions. In addition to the data collected from fieldwork, the dictionary contains material compiled from existing lexical inventories, from texts published after 1930, and from archival recordings. The new authoritative resource, the DLF not only contains the largest number of words and expressions but also provides the most complete information available for each entry. Entries include the word in the conventional French spelling, the pronunciation (including attested variants), the part of speech classification, the English equivalent, and the word's use in common phrases. The DLF features a wealth of illustrative examples derived from fieldwork and textual sources and identification of the parish where the entry was collected or the source from which it was compiled. An English-to-Louisiana French index enables readers to find out how particular notions would be expressed in la Louisiane .

Writing in Unreaderly Times: A Collection of All Original Essays from Today's (and Tomorrow's) Young Authors on the State of the Art -- and the Art of the Hustle -- in the Age of Information Overload
An anthology of original essays from our most intriguing young writers, Bookmark Now boldly addresses the significance of the production of literature in the twenty-first century. Or simply, "How do we talk about writing and reading in an age where they both seem almost quaint?"The book features authors in their twenties and thirties -- those raised when TV, video games, and then the Internet supplanted books as dominant cultural mediums -- and their intent is to examine: (1) how this generation came to writing as a calling, (2) what they see as literature's relevance when media consumption and competition have reached unprecedented levels, and (3) how writing and reading fit in with the rest of our rapid, multitasking world. The result will offer a voyeuristic peek into the private, creative lives of today's writers and shed light on what their work means at a time when the book business is changing, yet -- almost paradoxically -- a time when storytelling as a means of both self-realization and community building (be it via e-mail, weblogs, or "This American Life") seems more relevant than ever before. Edited by Kevin Smokler, a Bay Area entrepreneur who has devoted himself to fostering literary culture and cultivating fresh talent, Bookmark Now is a collection that both captures the state of the art and provides inspiration to aspiring writers at all levels.
Cool tools really work. A cool tool can be any tried-and-true book, gadget, software, video, map, hardware, material, or website. The reviews in this book were written by those of us who have actually used the tool and others like it. We only review things--old or new--that we like and ignore the rest. This is a curated collection of the best cool tools for the Kitchen. It is not intended as a shopping list or checklist. Consider this a jumping-off point for thinking and re-thinking about what’s possible in your kitchen. Some kitchens can certainly operate with fewer and/or different tools; some might require more. But everything we’ve included here is well worth knowing about.

A brilliant insight into life in the air and on the ground' Observer In February 1945, British and American bombers rained down thousands of tons of incendiaries on the city of Dresden, killing an estimated 25,000 people and destroying one of the most beautiful cities in Europe. The controversy that erupted shortly afterwards, and which continues to this day, has long overshadowed the other events of the bomber war, and blighted the memory of the young men who gave their lives to fight in the skies over Germany. Journey's End neither condemns nor condones the bombing of Dresden, but puts it in its proper context as part of a much larger campaign. To the young men who flew over Germany night after night there were other much more pressing worries: the V2 rockets that threatened their loved ones at home; the brand new German jet fighters that could strike them at speeds of over 600mph. They lived life at a heightened tempo during these final unforgiving months of the bomber war when no quarter was given on either side. As the climactic volume in Kevin Wilson's acclaimed bomber war trilogy, Journey's End chronicles the brutal endgame of a conflict that caused such devastation and tragedy on both sides.
