Each of this book's 32 essays discusses a chosen topic, at a level that is generally within that of a four-year degree course in Physics. The essays supplement (indeed sometimes correct) treatments usually given, or supplies reasoning that tends to fall through the cracks. The author uses his life long experience of tutorial teaching at Oxford to know what topics often need such discussion, for clarification, or for avoidance of common confusions. The book contains accounts of even-standard topics, accounts that offer an unusual emphasis, or a fresh insight, or more than customary rigour, or a cross-link to apparently unrelated material. The student (and their teachers) who really wants to understand physics will find this book indispensable. Often the outcome of tutorial discussion has been an understanding that lies a little to the side of what is presented in standard texts. Such understanding is presented here in the essays. The topics covered are diverse and have something useful to say across most areas of a physics degree.

The book gives accounts of non-quantum optical phenomena and of instruments and technology based on them, at a level suitable for the last two years of an honours degree in physics and for graduates starting out. Topics covered include the conventional (diffraction, coherence, thin films, holography...) but also the less conventional (étendue, Gaussian beams, laser cavities, cd reader, confocal microscope...) which belong in today's university courses, for example, to support laser physics. Even the conventional material has frequently been given a fresh presentation by giving a tidier-than-usual route through a calculation, or finding insightful connections with other parts of physics, or simply avoiding common errors. Problems offer opportunities for checking the reader's basic understanding, or for taking a careful route through reasoning, or for checking orders of magnitude. But most problems contain exploratory and critical material: investigating possible alternative approaches, asking searching questions about fundamentals, or solving apparent paradoxes.

This book shows that T.S. Eliot, working in the romantic tradition, deliberately uses ambiguity in language to manifest the realm of ultimate reality. He maintains this technique first to create moments of unmediated experience in his early poetry and, in his later poetry, to express the transcendent in time. No other study has explicitly dealt with Eliot's use of ambiguity and its significance in relating Eliot to romanticism and postmodern practices of deconstruction. In this study, Eliot is shown to be a significant link, overlooked until now, between tradition and the contemporary fracturing of tradition.

So many stories have come down to me about my remarkable family going right back to escaping from France in an open boat in 1572. There was a great-grandfather who was City Surveyor of the Melbourne Corporation and a remarkable hero, Sir James D'Ombrain, who refused to follow Westminster orders and delivered grain, aboard the revenue cruisers, to the starving in Ireland during the potato famine. Then at age ninety I am blessed with a clear memory going right back to the days when I was but three years old. I have so many memories I wish to share. Some are amusing and some hard to believe. There are simple stories that bring life to many family members I have known, past and present. A love of the sea and craft that sail upon it is also woven through the text. I tell stories of friends, and people whose contributions to society should not be forgotten. I tell the story of how I came to establish a ground-breaking tertiary music education program. I share my reflections on war, religion and politics and tell some amazing tales of closer contact with our remarkable First Nations' Australians. Our family has long displayed a passion for botanical and zoological pursuits. It is appropriate that I conclude the book with a few unbelievable stories about my encounters with birds. In all my stories I am "somewhere in the middle" closely watching life's cavalcade.

Preservation by fermentation is one of the oldest food technologies, and yet it continues to play an important role in meat preservation in many parts of the world. These processes can be relatively simple, with minimal microbial involvement, or more complex, involving defined ingredients and starter cultures with controlled environmental conditions. Most meat fermentations rely on the use of salt as an ingredient, sometimes with the addition of nitrate, nitrite and spices. In some cases the meat may be smoked and, as with some cheese fermentations, fermented meats may be ripened by moulds and yeasts. The preservation of meats by fermentation depends on the interaction of a number of environmental and microbio logical factors including the pH, water activity, redox potential and the presence of preservatives and a competitive microftora. The subject of fermented meats is an important but relatively specialised area of microbiology and food technology. Few books have specifically addressed this subject and the topic has usually been dealt with in reviews and research papers with a significant proportion of these being published in languages other than English. As far as we are aware, this volume is the first to bring together a selection of key topics relating to the production of fermented meats and their chemical and microbiological properties. The book begins with a general chapter on the properties of meat.

This book examines sustainable energy development in China, a non-liberal state, as a counterexample to conventional wisdom that effective policy outcomes are premised on the basis of decentralized governance. The use of sustainable energies as part of the solution for stabilising global warming has been promoted in industrialised countries for the past three decades. In the last ten years, China has expanded its renewable energy capacity with unprecedented speed and breadth. This phenomenon seems to contradict the principle of orthodox environmental governance, in which stakeholder participation is deemed a necessary condition for effective policy outcomes. Based upon policy documents, news report and interviews with 32 policy makers, business leaders, and NGO practitioners in selected subnational governments, this book examines the politics of sustainable energy in China. It engages debates over the relationships among democratic prioritisation, environmental protection, and economic empowerment, arguing that China’s quasi-corporatist model in the sustainable energy field challenges Western scholars’ dominant assumptions about ecopolitics.
