This book is the accumulation of recipes that came mainly from the kitchen of a woman that was dear to my heart and that is my Aunt Mary Ellen Macon. Mary Ellen resided in the South, West Point, Mississippi. At a very young age she learned how to cook. As time passed, Ms. Macon became well known for her cooking. She would cook at parties and for other events. She also was the caretaker of the mother of the President of Coca-Cola. Mary Ellen was a master in the kitchen when it came to cooking. I can remember when she would come to visit our family how she would prepare the meals without even having to measure out the ingredients. She had that special touch. One of my favorites was when she baked dinner rolls. Her rolls were so light that would melt in your mouth. When she cooked a meal she always had a dessert to go with it. You could gain ten (10) pounds in a week from eating her food. Because of her passion for cooking this book is written in remembrance of her.

We Are Not Wearing Helmets is a collection of political love poems rendered through the eyes of Cheryl Boyce‐Taylor, an immigrant living in New York City. For many women of color, aging in America means experiencing a lack of proper medical treatment, inhumane living conditions, poor nutrition, and often isolation. Many seniors feel thrown away, useless, and vulnerable. These poems challenge the injustices of ageism, racism, and oppression with rage, forgiveness, honor, and endurance. During these rough political times, they are salve and balm. Born in Trinidad and having grown up in Queens, Boyce‐Taylor creates a framework for her own experience out of the life experiences and work of beloved Black women in history. She salutes the women who have lifted her, including Audre Lorde, Fannie Lou Hamer, Ntozake Shange, and Winnie Mandela, as well as her mother, Eugenia Boyce, and her beloved daughter‐in‐law, Deisha Head Taylor. The poems in this collection are unapologetic, fierce, and confrontational while remaining caring and intimate. Institutions of higher education are keen to improve teachers’ intercultural experiences, communication, and understanding, but offer few resources for bringing the research literature to direct application in teacher education programs. This volume addresses that gap by examining what intercultural exchanges in teacher education look like, why they are important, and how they can be maintained. The authors examine how socio-cultural beliefs, institutional structures, and external accreditation bodies interact in the process of interculturalization, highlighting the incentives and barriers as well as strategies to implement and maintain interculturalization projects.
