The application of these key technologies with biotechnology, as yet only applied to a limited degree in food manufacture, coupled with advances in biochemical and rheological understanding of dough as a biomass for breadmaking, should provide us with more expertise and ability to control the processes with greater efficiency. The application of fermentable substrates and industrial enzymes under strict kinetic control should contribute to improving the flavour characteristics of bread. Current trends towards improving the nutritional contribution of bread to the daily diet are improving the competitive edge of bread as a basic food in the market-place.

Bovine Spongiform Encephalopathy (BSE) or "mad cow disease," first diagnosed in late 1986, is transmitted through feed, indirect horizontal transmission, apparently maternally and possibly horizontally, through cattle-to-cattle contact or a contaminated environment. With no ante-mortem test yet developed, the only information available about BSE is from case surveillance and a limited number of experiments. Only through careful and rigorous modeling and analysis can reliable estimates of past infection and predictions of future cases be made. The modeling developed for BSE utilizes a range of techniques from statistics, ecology, and demography that is of interest both as a case study and for providing tools for other modeling projects. Statistical Aspects of BSE and vCJD: Models for Epidemics presents the general methodology required for thorough analysis and modeling of novel long incubation diseases with largely unknown etiology. BSE in British cattle is the primary example system presented, but application to other diseases, particularly the transmissible spongiform encephalopathies (e.g., Scrapie in sheep and nvCJD in humans) are also highlighted. Some two centuries ago, during the Revolutionary and Napoleonic Wars, New England’s merchants and traders found themselves frozen out of their traditional markets in Europe and the Caribbean. Desperate for new business for their idled ships and crews, they asked President Andrew Jackson to explore opportunities for them on the other side of the globe. Prompted by the secretary of the navy, Jackson sent Edmund Roberts—an unemployed ship owner from Portsmouth, New Hampshire, with no diplomatic experience—on an “embassy” (mission) to the potentates of Oman, Siam, Cochin China, and Japan, to negotiate pioneering trade treaties. So began an unusual and ultimately fatal adventure that twice took Roberts to exotic and dangerous places on the other side of the globe. Because the British and the Dutch were deeply interested in these same new markets, Roberts’ mission was kept secret. Sailing in the ill-fated USS Peacock, first in company with USS Boxer, then with USS Enterprise, Roberts traveled almost 70,000 miles across the great expanses of two oceans to successfully negotiate treaties with Oman and Siam. We believe in social justice. We support educational reform. Yet unless we reframe our approaches to both, says C. A. Bowers, the social justice attained through educational reform will only lead to more intractable forms of consumerism and further impoverishment of our communities. In Educating for Eco-Justice and Community Bowers outlines a strategy for educational reform that confronts the rapid degradation of our ecosystems by renewing the face-to-face, intergenerational traditions that can serve as alternatives to our hyper-consumerist, technology-driven worldview. This book explores the premise that a physical theory is an interpretation of the analytico–canonical formalism. Throughout the text, the investigation stresses that classical mechanics in its Lagrangian formulation is the formal backbone of theoretical physics. The authors start from a presentation of the analytico–canonical formalism for classical mechanics, and its applications in electromagnetism, Schrödinger's quantum mechanics, and field theories such as general relativity and gauge field theories, up to the Higgs mechanism. The analysis uses the main criterion used by physicists for a theory: to formulate a physical theory we write down a Lagrangian for it. A physical theory is a particular instance of the Lagrangian functional. So, there is already an unified physical theory. One only has to specify the corresponding Lagrangian (or Lagrangian density); the dynamical equations are the associated Euler–Lagrange equations. The theory of Suppes predicates as the main tool in the axiomatization and examples from the usual theories in physics.
