The production of fermented beverages is nowadays a technically sophisticated business. Many people outside it, however, even if they are familiar with the food industry overall, fail to appreciate just what advances have been made in the last twenty or thirty years. In part this is due to the blandishments of advertising, which tend to emphasise the traditional image for mass market promotion at the expense of the technological skills, and in part due to a lack of readily available information on the production pro cesses themselves. This book attempts to remedy the balance and to show that, far from being a quaint and rustic activity, the production of fermented beverages is a skilled and sophisticated blend of tradition and technology. We have chosen to organise the book principally by individual beverages or groups of beverages, with the addition of a number of general chapters to cover items of common concern such as fermentation biochemistry, adulteration, filtration and flavour aspects. While we have tried to eliminate excessive duplication of information, we make no apologies for the fact that certain important aspects (e. g. the role of sulphur dioxide in wine and cidermaking) are discussed on more than one occasion. This only serves to underline their importance and to ensure that each chapter is moderately self-contained.
Hierarchical Task Analysis (HTA) is carried out by professionals who have to undertake a wide range of human factors and human resource design decisions. Using a wide range of industries and contexts to demonstrate the applicability of HTA in various settings, the author has used straightforward and accessible case studies and examples for the reader. HTA is a method of defining goals and tasks for a particular job (using factors such as time, plant status, conditions, instructions and sequence) and then dividing each goal into "sub-goals", each with its own plan, in order to produce the most effective method of achieving the final aim. The discussion of applications will aim to reinforce general concepts of HTA as well as provide guidance on how HTA may be used. There have been articles on HTA and chapters in other books, but there has never been a book on the subject to do it justice. This will be the first.

This monograph concentrates on the implementation of concurrent logic programming languages on loosely-coupled parallel computer architectures. Two different abstract models are also considered: a graph reduction based model and a more imperative approach. The design of a specialized instruction set is presented that is general enough to be used for the whole family of concurrent logic programming languages. In particular the language Parlog is concentrated upon because it is the most efficiently implementable of all the non-flat logic programming languages. Other issues arising from the implementation of a programming language are discussed, in particular the design of a load balancing scheme which deals with the large number of short-lived processes inherent in a correct language implementation. Detailed descriptions of all the data structures and synchronisation algorithms are also presented. Resource exhaustion is also discussed and handled within the implementations. Detailed performance results for both models of computation are given. From the material it should be possible for the reader to create an implementation.

During the Depression the Canadian National Parks Branch was under pressure to make the park system truly national, to bring the advantages of parks to all provinces. In Atlantic Canada, however, it found itself dealing with an environment that was far different from what it was accustomed to in Western Canada. The land areas were smaller, flatter, and, having been settled for generations, could hardly be considered wild. Wildlife was smaller and less numerous.
When the late Reg Scott wrote the first edition of this book in 1981, his intention was 'to produce a script generally interesting to those readers requiring more information on cheese'. It was not conceived as a book that covered the most recent developments with respect to lipid or protein chemistry, for example, but rather it was hoped that the text would reveal cheesemaking as a fascinating, and yet technically demanding, branch of dairy science. The fact that the author had some 50 years' experience of cheesemaking gave the book a very special character, in that the 'art' of the traditional cheesemaker emerged as a system that, in reality, had a strong scientific basis. Today, cheesemaking remains a blend of'art and science' for, while much cheese is made in computer-controlled factories relying on strict standard ization to handle the large volumes of milk involved, the production oftop quality cheese still relies on the innate skill of the cheesemaker. It was considered appropriate, therefore, that this revised edition ofCheesemaking Practice should include, at one end of the spectrum, details of the latest technology for curd handling and, at the other, simple recipes for the production of farmhouse cheeses.
