This book reviews the authenticity of certain Street Food specialties from the viewpoint of food chemists. At present, the food market clearly shows the predominance of fast-food operators in many Western countries. However, the concomitant presence of the traditional lifestyle model known as the Mediterranean Diet in Europe has also been increasingly adopted in many countries, in some cases with unforeseen effects such as offering Mediterranean-like foods for out-of-home consumption. This commercial strategy also includes the so-called Street Food, which is marketed as a variation on Mediterranean foods. One of the best known versions of Street Food products can be found in Sicily, Italy, and particularly in its largest city, Palermo. Because of certain authenticity issues, the Italian National Council of Research Chemists has issued four procedural guidelines for various Palermo specialties with the aim of attaining the traditional specialty guaranteed status in accordance with European Regulation (EU) No 1151/2012. The first chapter of the book provides a brief introduction to the general concept of Street Foods. The remaining four chapters describe four food specialties – Arancina, Sfincionello, Pane ca meusa, and Pane e panelle – typically produced in Palermo, with particular reference to their chemical composition, identification of raw materials from a chemical viewpoint, permissible cooking and preparation procedures (with chemical explanations), preservation, and storage. The book offers a unique guide to Street Food authenticity, and can also serve as a reference work for other traditional/historical products.

This book aims to understand the “texture” of the post-Soviet region, where waves of de-integration and re-integration have been resonating at different times and through diverse manifestations over the last quarter of century. The post-Soviet states have been evolving in an embryonic system of states in their close neighbourhood, whose boundaries and rules of interactions are still in the making. However, one can already detect specific traits of regional governance, one of these being the presence of overlapping organisations and institutions. It includes reflections on relations between state formation and region formation and a tentative conceptualisation of a post-colonial form of regionalism. The focus on small states, featuring different behaviours vis-à-vis regional organisations and regional imaginaries in their transitional and still unsettled state identities and foreign policy narratives, constitutes a further element of originality. This book proposes a radically evolutionary approach to biolinguistics that consists in considering human language as a form of species-specific intelligence entirely embodied in the corporeal structures of Homo sapiens. The book starts with a historical reconstruction of two opposing biolinguistic models: the Chomskian Biolinguistic Model (CBM) and the Darwinian Biolinguistic Model (DBM). The second part compares the two models and develops into a complete reconsideration of the traditional biolinguistic issues in an evolutionary perspective, highlighting their potential influence on the paradigm of biologically oriented cognitive science. The third part formulates the philosophical, evolutionary and experimental basis of an extended theory of linguistic performativity within a naturalistic perspective of pragmatics of verbal language. The book proposes a model in which the continuity between human and non-human primates is linked to the gradual development of the articulatory and neurocerebral structures, and to a kind of prelinguistic pragmatics which characterizes the common nature of social learning. In contrast, grammatical, semantic and pragmatic skills that mark the learning of historical-natural languages are seen as a rapid acceleration of cultural evolution.
